Hi Friends and happy weekend to ya! It has been so hot lately, I’m dying.
I’ve got a few events to go to over the weekend and the thought of turning on my oven makes me want to cry. So I’ve made a few go to no bake desserts and I’m sharing the recipes below.
Coconut Milk Chocolate Mousse
This is honestly the easiest recipe. I think I originally got it from the Trader Joe’s mailer and have been making it for years!
1 can coconut milk (regular not lite)
3/4 of a bag of chocolate chips
Pinch of salt
2 tsp vanilla extract (you can use coconut rum or coconut extract in addition to or in place of the vanilla)
Put all ingredients except chocolate in a blender.
Microwave chocolate in a glass bowl for 30 seconds. Take the bowl out and stir chocolate chips. Microwave for another 30 seconds and stir until smooth.
Pour chocolate in blender with the other ingredients and blend until smooth.
Pour mixture in ramekins or whatever individual serving sized dishes you have. This is very rich so small ramekins work well.
Refrigerate for at least 45 minutes.
Brown Butter Rice Krispy Treats
I love basically anything with brown butter. It gives such a rich, nutty, caramel flavor to any dessert you put it in. This recipe is a fave from my friend Beth and everyone I know goes crazy for them.
9 cups rice cereal, any brand will do
2 sticks of butter
2 bags marshmallows
1 vanilla bean, split with seeds scraped out (if you don’t have one use vanilla extract. The beans do make a difference in the flavor though)
Melt butter and vanilla bean seeds until butter is light brown. Should take 5-7 minutes on medium heat. It goes from brown to burnt very quickly so keep an eye on it.
After butter is browned mix in marshmallows until fully melted and rice cereal until combined evenly.
Spread in a greased glass dish and cut when cool.
I dare you to make these last longer than a day, they are so good I usually can’t stop!
